After having harvested so much spinach lately we of course wanted to create something tasty from it. We opted for pizza, and since it came out really well i’d like to share my recipe with you.
Yields 2 pizzas.

Ingredients for the dough:
1 Pkg. dry yeast
180 ml warm water
320 g. all purpose flour
1 tsp. salt
1 tbsp. olive oil
Ingredients for the topping:
about 200 ml sieved tomatoes
some hands full of fresh spinach leaves
2 red onions
Carefully stir the dry yeast into the warm water and put it aside for 5 minutes. In the meantime mix the salt with the flour. Then also add the oil and the water with the yeast. Knead it, adding some flour if needed, until you get an evenly soft dough. Roll it to a ball, put it in a well oiled bowl and put it in a warm place and let it prove for an hour.
Meanwhile, wash the spinach leaves and cut the onion into fine rings. The dough should have doubled after about an hour. Now preheat the oven to 200°C, roll the dough and add the sieved tomatoes, spinach leaves, onion rings, mozarella and a little pepper. Bake it for about 26-28 minutes. Dom’t forget to add some oregano right before serving 🙂
