Chia Pudding seems to be the new in-food at the moment. You stumble upon chia pudding recipes at every corner. Still, I just have to add mine, since despite all these recipes I couldn’t find the ones that satisfy me. (Do you really love chia pudding on cereals garnished with berries? I think it really looks nice, but beyond that I didn’t like it too much.) But I think everybody has to find his favourites himself. I finally found mine and since I’m really in love with these I’m excited to share my recipes here. Hope you like’em, too. 🙂
Base recipe: Chia Pudding
I tend to prepare a little more of the pudding in advance since it lasts some days when kept in the fridge. Besides, this way there is always some pudding available, if I get a spontaneous appetite. I mix:
- 320ml Coconut Ricedrink
- 4tbsp. Chia Seeds
Stir again, when the seeds started to well so it doesn’t go lumpy. Leave to well up for at least 2 hours, preferably overnight. That’s it.
Of course you can exchange the coconut ricedrink with any other liquid you prefer. For the recipes I’m going to present here I love the coconut ricedrink most 🙂
1 ♥ Chia Coconut Pudding with Watermelon
This recipe is my absolute favourite. It’s so yummy I could eat it all the time X-D Especially in summer, the watermelon part is so refreshing. Gorgeous. But also the coconut-pudding alone is awesome. 😀
And it’s so simple. Stir chia-pudding and coconut cream at your liking and add diced watermelon.
For the coconut cream:
- 50g Coconut powder
- 50g brown cane sugar
- Coconut ricedrink or water
Mix the coconut powder with the sugar and add just as much water , so that the powder dissolves and becomes creamy. Than heat it and stir again so that the creamy gets completely smooth. Let cool. Done. This cream is *really* sweet, you actually won’t need to much for one pudding, so it lasts for a while if you keep it in the fridge.
2 ♥ Chocolate-Banana-Chia-Pudding
Tasty. So tasty. And an absolutely awesome snack after sport.
- 1 Banana
- 1tsp. cocoa, unsweetened
- 1tsp. honey
- 150g Chiapudding as in the base recipe
Mix the banana with the cocoa and the honey until smooth. If needed, add some milk. Now layer the banana-chocolate-cream and the chia-pudding in a glass. Et voilà.
3 ♥ Cinnamon Chia Pudding on Apple
So simple and soooo good. If I’m in a hurry, or the fridge is empty, this one might even replace my breakfast. X-D
- 1 Apple
- 150g Chia Pudding
- Cinnamon and Sugar
Dice the Apple into a bowl, add chia pudding and cinnamon and sugar at your liking and you’re all done. 🙂
